Its Christmas today. Christmas has to be my favourite time of the year because of all the Christmas lights on the houses making the outside look oh so lovely, christmas music, decorating and of coarse baking. During Christmas or just this of the year treats are a must. Chocolate, peppermint, sugary treats. I will be sharing with you two of my favourite treats to make.
Sugar Cookies
Ingredients:
1 1/2 cups butter, softened or margarine
2 cups white sugar
4 eggs
1 teaspoon vinilla
5 cups all-purpose flour
2 teaspoon baking power
1 teaspoon salt
Directions;
1) In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least 1 to 2 hours (or overnight is best).
2) Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3) Bake 6 to 8 minutes in preheated oven. Cool completely before decorating.
To decorate mix together 1 cup of powered sugar, 1 1/2 teaspoon of milk (add a little bit first) and 1 teaspoon of vanilla. Also if you like you can add a little bit of mint extract and food colouring. Add the icing onto the cookies to give then the finished touch.
Peppermint Fiddle Diddles
Ingredients:
1/2 cup butter or margarine
2 cups granulated sugar
1/2 cup milk
6 tablespoons cocoa powder
3 cups quick-cooking rolled oats
1/2 cup chopped walnuts
1 pinch salt
1 teaspoon vanilla
Topping:
A few candy canes crushed
Directions:
1) In a saucepan put in the butter or margarine, sugar and milk. Heat on medium, stirring often, until it comes to boil. Remove pan from heat.
2) Add all remaining ingredients in saucepan. Stir well. Drop small rounded shapes using a spoon onto parchment paper. Sprinkle on the crushed candy canes. Let cool completely in fridge.
3) Store in a container with lid in the fridge. Makes about 40 fiddle diddles.
